I had just downloaded the latest Mac version of AC, only to find that there are dramatically fewer servers (online multiplayer games). What am I doing wrong?

You haven't done anything wrong. It's just that people didn't (or don't want to) download 1.1 yet and then there are less people who open servers in it.
