create a shortcut to the assaultcube.bat and pass it an argument like "--home=C:\myAC" .. as long as you created a directory "myAC" on your C:-drive that should give you permission to write .. or has Windows-7 somehow gone security-crazy in a way I'm not currently aware of?!
You should really - as always when expecting help in the cross-platform world of the interwebs - give us explicit details about your system so we can give you informed answers instead of wild stabs in the dark ;-)
