Eccleston > Tennant > Smith
Others may put Tennant first and Eccleston last. But as good as Smith is, he'll never be as good as Tennant, that is for sure.
Start with Eccleston. You get to see the earth die (2nd episode). Also, first episode has mannequins killing people - it's worth it, start there! Plus, they poke fun of Brittany Spears.
Eccleston is a bit darker, less forgiving (personality-wise) than the other Doctor's - that's why I like him.
I myself, have not bothered with any Doctors prior to the reboot (Eccleston). Not worth my time imo - to me, it would feel like watching Black & White (vs HD these days) and would ruin it for me. Besides, it rare for them to significantly reference a pre-reboot episode in later episodes.
