indeed, i really want only knife...
In other games can the admin just 'ban' weapons to be played... Is there any possible script for this in AC?

There is no way to write a auto ban if someone is using a weapon other than a knife. At least in cubescript. However, I believe you could have a server that does that. The problem is, is that the devs wouldn't want you putting this on the masterserver.

No i don't mean ban someone if he uses other weapon just that they can't use it...
Like if they have sniper that they can't shoot, or something like that...

The only way you can have knife only games on pubserv is to have everyone agree to it, or play LSS on a map that has no nade pickups by default (do we have those?)
I'm hoping for a gamemode option at some point though.

For now, you could try the honour system. Works surprisingly well for people that speak the same language.

In T/OSOK mode:
Peoples: «Only knifes» Peoples: «Only knifes we say» Me: «So vote lss mode!» - Vote set for desert lss -> Vote passes. Me: Grab nada and gib someone. People: «Only knife» Me: «So vote a mode with knife only. I use the weapons the game gives me» Peoples: «set vote to kick DES|OpenSource.»
